The scientific name of Asafoetida is  "Ferula assa fcetida". Called "Asafcetida" in English, it is called "Perankayam" in Tamil. Asafoetida in Telugu is "Inguva".  In Kannada is "Ingu". " Mende du diable" in French.

Asafoetida is a perennial plant that grows to about 1.5 - 2 m and has a circular leaf structure, with 30-40 leaves.  The leaves of the stem have broadleaf sheaths. Flowering knobs are about 10cm thick. Flowers are light yellow. All parts of the plant have a pungent odour.

Asafoetida is obtained by dehydrating the secreted milk from the root of the plant, or the rhizome.
